Origin

Spiced stews are ancient in the Indian subcontinent (sambar, kuzhambu). Trade carried curry traditions to Southeast Asia (Thai massaman, Malay laksa paste, Indonesian rendang), East Asia (Japanese curry via British colonial influence), and the Caribbean (via Indian indentured labour in the 19th century).

The link between Indian curry and Thai massaman is documented (massaman derives from the Malay word 'masam' meaning sour, and the spice profile reflects Persian/Indian trade). The link between Indian curry and Japanese curry is more recent — late-19th-century British colonial influence. Caribbean curry reflects 19th-century Indian diaspora.

The word 'curry' is a European colonial-era label for an enormous range of spiced dishes across South Asia, Southeast Asia, Japan, and the Caribbean. Indian curry traditions are anchored by regional spice blends (garam masala, sambar powder, vindaloo masala). Thai, Japanese, and Malaysian curry traditions are related through trade and Buddhist-Muslim exchange but developed distinct spice profiles.
